Abstract

Penelitian ini dilakukan dengan tujuan untuk mengetahui alternatif olahan yang dapat meningkatkan nilai tambah produk jagung sebagai acuan untuk melakukan upaya pengembangan komunitas di Desa Rhee, Kecamatan Rhee, Kabupaten Sumbawa.  Penelitian ini menggunakan pendekatan metode campuran (mix method), yaitu penelitian kualitatif untuk mendalami alternatif olahan jagung dan penelitian kuantitatif dengan menggunakan metode analisis nilai tambah Hayami untuk mengetahui besaran nilai tambah pada masing-masing alternatif olahan jagung.  Hasil dari penelitian ini menujukkan bahwa alternatif olahan produk yang terdapat di desa Rhee yaitu dodol jagung, permen jagung dan kue tradisional berbahan dasar jagung. Adapun nilai tambah dari masing-masing produk olahan jagung tersebut adalah 52% untuk dodol jagung, 85% untuk permen jagung, dan 56% untuk kue tradisional berbahan dasar jagung. Dengan demikian, alternatif olahan hasil jagung yang dapat memberikan nilai tambah paling tinggi adalah permen jagung. Namun produk olahan yang memiliki kemampuan penyerapan tenaga kerja paling tinggi adalah dodol jagung.
